Fricasse de pollo

INGREDIENTS:

6 boneless, skinless chicken breasts, diced in bite-size chunks
4 tablespoons extra virgin olive oil
1 large onion, diced
1 large green pepper, chopped
3 garlic cloves
1 large can crushed tomatoes
I can small peas, drained
2 medium potatoes, peeled and cut in squares
1/4 cup of white wine – good enough to drink :)
1/2 cup chicken broth – low sodium (can sub with a chicken bouillon cube)
1/2 cup beer – your favorite for flavor
Cumin, pepper and salt to taste

PREPARATION:
Heat olive oil in medium-size pan. Brown chicken, garlic, onion and pepper on medium-low. Once chicken is cooked, add seasonings, tomatoes, potatoes, broth and wine. Bring to boil. Cover and simmer on medium-low for 45 mins., stirring frequently. Turn to low heat; add beer and peas. Taste for any added flavor and continue heating on low UNCOVERED for another 15 minutes. Turn off heat, cover and let flavors simmer. Enjoy later with white rice, green salad and plantains.
